A Disney Sketchbook does contain a few rough drawings for various animated films and shorts.
Beauty and the Beast is definitely among them. I've perused through it time and again at World of Disney, but never got around to buying it (though after this post, maybe I will, haha). Here's a still from a French YT video that examines the book:

As for screen shots from the WiP version, those could be easily gleamed via screen-capture options on media players (VLC Player, for example) if one put the DVD in and paused at the desired frames. It would only be in standard definition (640x480) but it's a start? If the WiP on the Blu-Ray were an HD stream, one could get hi-def shots of those frames by extract the complete HD stream that it plays on. Unfortunately, it's just an SD stream that plays picture-in-picture, so it'll be the same as if you paused on WiP segments of the DVD.
(And it looks like Marce82 could help better than I as he seems to have a lot of images. I hate to be a hitchhiker, but I wouldn't mind having some of those stills, too.)
