While Disney's commitment to HD bonuses has been commendable, I can tell you now you won't get a better edition of Lilo and Stitch if they refilm the documentary in HD (assuming its not already HD friendly). I say this because the whole 2+ hours is a candid, filmed at the time, open and intimate video diary of the production and release. It's just not possible to capture that again. The documentary is actually longer if you take in all the branching side-steps too - it comes to about 3 and a half hours if I remember correctly. Personally, I'd rather wait and get the best HD edition possible.
It's true that some of the side-steps, deleted scenes, music videos and new content could be in HD, but the guts of the second disc simply cannot be replaced.
