I'm sure I could find this out on my own if I were to research it a little, but I thought I would save some time and ask as someone may know....
Will any of the shorts in the upcoming mickey mouse black and white V2 dvd have the mickey/donald/goofy combo like the last short of V1? Or even any shorts that will have donald in them? I know V1 had at least one short with donald in it. They were my favorites out of V1 so I hope there will be more in V2.

As far as I can tell, the answer is no.
None of the shorts in Mickey Mouse in B&W vol 2 have Donald in them, and Goofy appears only in a single one: "Mickey's Mellerdrammer".
Characters in those films are besides Mickey himself: Minnie, Horace Horsecollar, Clarabelle, Pete, Pluto, Kat Nipp, and perhaps a few more...

However, since the Treasure sets are targeted at collectors more than at children/families, even Disney must understand that the original black & white format is the only proper way to present those cartoons.

With today's digital video and computer technology they could be colorized (like in a coloring book) while mantaining the color information totally separate from the untouched black and white original and collectors and video enthusiasts could turn the color down and see the original form while kids and the casual viewers enjoy them in "modern" color, but it'd probably cost lots $$$ to do it properly and as Anders said that's not the aim of the Treasure series neither.
Besides, if even Beatle fanatics didn't try to push the mono button while hearing the new widescreen A Hard's Days Night DVD (which eliminates the fake 5.1 enhanced surround) and complained like crazy about the sound, expecting people to kill the color on their TVs would be expecting too much :/
So original (and correct) B & W only it is and must be.
