It's hard to say, because the movies are so vastly different. TSitS is just one great, big slapstick comedy. I watched it not too long ago and I was surprised at how much I liked it. Granted, the animation is not too good, the story is not too tight and the characters are nt very involving... but it's FUNNY! Not just the wizard's duel (which is epic Disney), but also Mad Madam Mim's song, the sequence with Merlin and Wart as squirrels, the parts with the wolf, Sir Hector and Kay... all hilarious!
The Black Cauldron definitly has the better animation. It was the first movie since Jungle Book which I thought had real classic Disney animation. Looked and felt like a Walt-era classic. I was pleasantly surprised after seeing it in its appropriate aspect ration for the first time not too long ago. I think it could've been much better, if it hadn't been in production so long, going through too much changes. Still, it's unique in the Disney canon and for that, I commend it. It even has some scary moments which I wouldn't recommend to younger kids. Disney was much more daring in the 1980's. Therefore, I pick TBC.
Edit: Who said TSitS was BORING?!

The Sword In The Stone, Higtus Figitus gets me smiling all the time.
The Black Cauldron I have not seen, only bits and pieces when I was little and they scared me back then, I tired reading the novel, but the novel was boring and confusing (I was about 8 or 9 at the time). Animation quality isn't bad, but it's a lot of recycling of other sequences from The Sword In The Stone and other animated Disney films.
The Sword In The Stone may be underrated but it's still a classic and still enjoyable 48 years later.

The Sword in the Stone. It's been one of my favourite films since I was very young and I have always thought it's one of Disney's most underrated features. I love all of the characters, particularly Merlin and Archimedes and I love the short and snappy songs. The wizard's duel is still one of the best animated and most entertaining sequences of any Disney film and, having seen the film almost a hundred times, I could still watch it now and laugh and be as entertained as I was the first time I saw it.
I do like The Black Cauldron but it's not among my favourite films in the Disney canon. I like the story and the vision that the filmmakers had for the film, but the characters just aren't entertaining enough for me. I enjoy watching the film and can appreciate how unique it is amongst Disney's other animated features but, for me, it's not as good as The Sword in the Stone.
