The "Fantasia" films, because the box set is really hard to come by now, whereas I still find copies of "Sleeping Beauty" all over the stores, and "Finding Nemo" isn't in moratorium yet.

Yeah, get Fantasia Anthology first, then SB (esp if you can still find the slip covers), and Nemo last, as it is still on the shelves. Where did you buy the Ultimate Toy Box?
First, Sleeping Beauty it's going to be harder to find. Second Fantasia Anthology Set it's also hard to find. Thrid Finding Nemo it's been at the stores ever since it's release and might be there a long time.

Definitely Fantasia Anthology as that's near impossible to find, then get Sleeping Beauty which is also out of print. Finding Nemo will be around a while, so that can wait. The Fantasia movies and Sleeping Beauty won't be re-released on DVD until they become Platinum Editions, and that won't happen till 2007 at the earliest, so just nab the current editions.
I will say the same thing most everyone else is saying. Definitely go for the Fantasia Anthology first. It is getting harder to find, and it's better to do so now while you can still find it in some stores, before the price goes even higher. I have seen it at most Best Buys I've been to, but normally I only see one, maybe two copies. Then next would be Sleeping Beauty, since it is also OOP. Then go for Nemo. You should have plenty of time to pick that one up.
I voted for Fantasia, because it is my favourite set of the three.
However, if you are planning to buy them all eventually, get Fantasia box first because it went OOP first (I think) and then Sleeping Beauty (because it has just gone OOP).
Nemo is a brilliant movie, but you should be able to get it for a while, as it is still charting quite well.
I'd say all three, but if I had to choose one I'd say Fantasia.
Mind you, you may get just as much enjoyment out of the others. It all depends on what you look for in a purchase. From your previous two purchases (Snow White and Toy Story), I think you would like any of them equally. So my advice is to buy them in the above order (if you do plan to get them all).
I'd say Sleeping Beauty 'cos I love the movie and having this DVD set, I like it too
