I'm sure that scene was just done suggestively, him hiding from the bells. Or that because the light was coming out, the bells made him realize that. At night, there's no stopping him. I'd say.

Why Chernabog would win...
-He can summon his minions and demons to attack Quasimodo and taunt him.
-He can raise up fire and brimstone and think nothing of it.
Why Quasimodo would win...
-He sure knows how to ring them bells!
-He's dealt with rocks coming to life and seeing a big one like Chernabog wouldn't faze him.
Why Chernabog would lose...
-He's afraid of the dark (at least according to "House of Mouse").
-He's stuck in one place, so he can't exactly retreat when he starts losing.
Why Quasimodo would lose...
-He's a peaceful person, he wouldn't want to fight.
-He's friendly and would probably offer Chernabog some tea and ask for advice on relationships.
In the end...I'd probably pick Quasimodo to be the winner. It's always fun rooting for the underdog.

I mean, he's so huge he could just squish Quasi with his thumb practically. If he didn't send his hordes of minions and ghouls after him first.
Oh and one more thing, I doubt it was the church bells that sent him back into mountain form, it was the fact that the dawn was beginning, hence the fact he shuddered at the light. I probably need to rewatch the segment but like I said I doubt it was the bells
