As blackcauldron85 said, there is a line of parks-exclusive DVDs available. Most are easy to find. The Magic of Christmas isn't as widely available but can be found in Liberty Square's Christmas Shop (perhaps a few of the others too).

There are a couple locations right in the vicinity of the Indiana Jones show at the Studios park at WDW that sell some Indy merchandise, including what I believe are park-exclusive action figures. Someone more knowledgeable might come up with the merchandise location names; I'd have to go find a park map somewhere...I seem to recall one is sort of a kiosk set up around a jeep near the attraction entry, the other is a more permanent (but open-air) shop location not far from the show's exits.
Also the Star Tours attractions have spawned quite a series of park-exclusive Star Wars action figures; I've purchased several for neighbors in return for dogsitting on WDW trips. (Although I find at least some of them are no longer park-exclusive...of course, you could probably track them all down on eBay if you wanted to)
Does anyone know if the parks have exclusive Pirates figures? I recall seeing POTC action figures on the past couple trips and I seem to remember them as being quite different from any of the figures on sale at Wal-Mart & Target, etc.

They also have the Mr. Potato heads in Epcot in the Mouse Gear, when i bought the potato heads the lady that worked in the store told me to open the back of mr. potato and stuff him with as many pieces as possible.
