Simple! They are hidden features on discs. You can sometimes activate them by accident, sometimes they are obvious. There are just little hidden items on DVD menus that contain various outtakes or extras. Go to www.dvdreview.com and click on Hidden Features and you will get a list of DVD Easter Egss and how to find them.

An easter egg is simply a hidden feature, put there to surprise DVD explorers out there. It could be a hidden documentary or film, or simply the DVD credits.

There are many websites that tell you how to access them.
...two men say they're Jesus, one of them must be wrong...

And they call them Easter Eggs because on Easter the "Easter Bells" let eggs drop from the sky and they land in trees, bushes, ... When people find them they are suprised because it was hidden, this is the same. Just see the dvd as the field the bells are dropping eggs on ;) And the bushes and trees are the menus :)

I don't know if this is of any help, but I remembered this thread that contained a number of easter eggs and their locations:

Hope it helps

DVD easter eggs are hidden extra features that aren't listed in the DVD special features. You have to look for some. Some easter eggs are easy to find some you have to do a bit of searching to find. Here's an example for you. If you have Monsters Inc. on DVD watch the company tour ALL THE WAY THROUGH after the tour you'll see a whole bunch of unmarked doors. You can click on some of them to see like outtakes and stuff. :)
Dragon, not lizard. I don't do that tongue thing.

Lilo: I'm not touching you!
Stitch: TOUCHING ME!
