We are going to Disney world for Easter, but its a surprise. What is the best stuff to do for adults in the park? Also where are the best hotels?

You should pick up Birnbaum's WDW Guide: WDW without Kids and see what they have to say. It's not that expensive and can be found at any bookstore like the ones at a mall and such. If you don't want to spend money, you can check it out of your local library. Having just tuned 19, I really don't have much advice. My parents have stopped riding and now the like shopping at Downtown Disney.
If you're planning to only go to WDW resort theme parks (not SeaWorld, Universal parks, etc), your best bet is to stay within the resort. If you're looking for more romantic accomadations, try these Disney resorts: head to Wilderness Lodge for a place to cozy up with ur significant other and get the feel of the American wilderness. Want to stay in a high class, victorian hotel? Head to the Grand Floridian where Guests' Requests Are Never Denied! Are you two lovebirds on a budget? Then head to Port Orleans: Riverside and stay in one of the mansion staterooms and take advantage of resort activities like carriage rides or ferryboats to Downtown Disney. If you don't mind an abundance of families, head to the Carribbean Beach Resort for a nice island getaway within your Florida vacation! These are only some of the resort offerings at Disney.
