Personally, I'd recommend the 2 Disc Sets of Alice in Wonderland, Mary Poppins and Monsters Inc as the films are lovely and the extras are great. You may not want Monsters Inc as it comes with no slipcover so therefore it must be ugly (:roll:), but I believe Alice and Mary do and if you don't see them with slipcovers, then just buy the DVDs and ring up for a slipcover later.
I say go with Alice in Wonderland: Masterpiece Edition. It's an excellent film with an amazing transfer, and a nice roster of bonus material. Plus, It'll probably go out of print in a couple of months, so I say snatch it now, not to mention the fact that you could use another Walt-era film in your collection. Other Disney movies I'd recommend:
Mary Poppins: 40th Anniversary Edition
A Bug's Life: Collector's Edition
Monsters, Inc.
Finding Nemo
Mulan: Special Edition
Brother Bear
Brother Bear and Monsters, Inc. don't have slipcovers, but I promise you that you'll kick yourself later if you avoid these movies (especially Monsters, Inc.) just because they have no slipcovers.
Mary Poppins: 40th Anniversary Edition
A Bug's Life: Collector's Edition
Monsters, Inc.
Finding Nemo
Mulan: Special Edition

Alan, I'd suggest Alice In Wonderland: Masterpiece Edition. You'll kick yourself if you don't get it and it goes OOP. It's got some of the Alice comedies plus An Hour In Wonderland. It's very good to have. If you're lucky, you might find one with a slipcover like I did.

I would go for Mulan: Special Edition. It's a really good movie and the bonus features look good as well.
A cheaper buy (and Recommended) would be Treasure Planet. It's not the best of the recent classics, but it wasn't the total disaster it was made out to be, either. It landed an Academy Away nomination for Best Animated Feature Film in the most crowded year for that category, so that counts for something. On repeat viewings, it gets better. The Bonus Features aren't too shabby, either, for a 1-Discer.

Add A Bug's Life to your list with no slipcovers as they are really hard to find with a slipcover.
