That's a great list, Wonderlicious! I'm going to be repeating some of it, but here goes some things which come to mind...
Diamond in the Rough: The Making of Aladdin is just a fantastic and comprehensive making-of documentary. The mix of old footage and the retrospective night content works really well.
The Story Behind Toy Story - Nice general half-hour documentary.
The Making of Bambi: A Prince is Born - Easy to appreciate and very cool that they brought in the living filmmakers to participate.
Inside Walt's Story Meetings (on Bambi) - An innovative advance over the standard historian's commentary.
The Story Behind the Masterpiece (on The Many Adventures of Winnie the Pooh)
The Making of Mickey's Christmas Carol (on Mickey Mouse in Living Color, Volume 2)
One Hour in Wonderland (Alice in Wonderland ME) and I Captured the King of the Leprechauns (Darby O'Gill) - nice vintage "Disneyland" specials.
Conversations with... series (Vault Disney DVDs) - Nice way to catch up with Disney veterans and reflect upon their various work. Subjects have included Tommy Kirk (Old Yeller), Tim Conway (The Apple Dumpling Gang), John Hough (Escape to Witch Mountain), James McArthur (Swiss Family Robinson)
"Fleabie Reel" (on A Bug's Life CE) - This was my first 2-disc set and it will always stay clear in my memory.
Deleted Songs from Aladdin - These were a cut above most deleted material.
Deleted Scenes from The Incredibles, Mulan SE
And for sheer weirdness, <a href="

Pixar Goodness:
The Pixar shorts, whether they're related to the films (like Mike's New Car on Monsters, Inc. and Jack-Jack Attack on The Incredibles) or not (Geri's Game, Knick Knack, Boundin', etc.), they're wonderful inclusions. In fact, those not related to the films kind of are the moment they play alongside them in theaters.
The Outtakes, particularly the two sets on A Bug's Life, are hilarious. The novelty began to fade for Toy Story 2 and Monsters, Inc. as others imitated it and there's only so much to do with these, but those are still inspired.
Games:
Timon & Pumbaa's Virtual Safari 1.5 - On The Lion King, it was like "Why did they put time into this instead of substantial stuff on the film?" On The Lion King II, the novelty had already worn off. But on The Lion King ½, even with my limited knowledge of Disney theme parks, this made for a very fun-spirited activity.
Just Kind of Cool:
The Virtual Aquariums on Finding Nemo and Virtual Forest on Bambi are just neat.
Disney Time Capsule: 1942 on Bambi, and even the ones that just focus on Disney projects (the Vault Disney DVDs) are good for some slickly-edited nostalgia.
I might add more to this later, as there's much I haven't come to yet.
"Fifteen years from now, when people are talking about 3-D, they will talk about the business before 'Monsters vs. Aliens' and the business after 'Monsters vs. Aliens.' It's the line in the sand." - Greg Foster, IMAX chairman and president
