Recipe Swapping

Hello everybody!

I'm a really keen cook, and I was wondering if there was interest enough on here to start up a recipe swapping thread? Like, your speciality dishes, or recipes that you've found that look delicious ?

Would obviously be open to baking recipes too :up:

I'm always happy to swap a few baking recipes. I have loads - cupcakes in pretty much every flavour.
Settling Soul mates? That is grim. And I've played Monopoly alone.

Yay, a food thread! My favorite recipe to make is peanut butter chicken. You can make it a couple of different ways, but each way has chicken, peanut butter, Worcestershire sauce, and brown sugar. You can add either evaporated milk or coconut milk, and either honey or lime juice. You can really play around with it, adding more sweet or more "tropical" flavors. I don't really measure, I just keep on tasting my sauce as I cook it. I generally bake the chicken first, cook some rice, and put the rice, then chicken, then sauce on the plate. It's so yummy.

Ooooo ok, now that sounds delicious Amy ! If only I hadn't turned vegetarian this year! :(

I've never been a massive meat eater, always preferred fish. But I love my animals, and I watched a documentary on the cruelty of animals and food prep … and got so upset Im all veggie now. I wonder if you could do the same recipe but adapted for Quorn maybe?

Ooo a recipe thread!!!! I started cooking 4 years ago, when I went vegetarian. Best decision I ever made. It's what taught me how to cook. I'm still learning new things about cooking all the time, so a place to swap ideas would be wonderful. :D

While I'm pretty quick at cooking, I can't seem to bake anything right. I always end up botching it somehow.

Atlantica, you mentioned Quorn. I haven't tried it yet. Is it good?

Oh my gosh yes, it's wonderful ! I've aways used it as my main source of protein really, apart from occasional chicken or bacon. Now I've entirely swapped over; there is a Quorn dish to replace practically any meat one, which is wonderful. And it doenst have the icky - 'this is trying to be meat but isn't' taste that some veggie products can have.

Personal favourites are the mince bags (use perfectly in chilli / pasta etc), the sausages (which I cook up in the oven, then eat with lentils cooked in vegetable stock, with a little bit of fried halloumi).

Atlantica, I'm sure the sauce would be good over couscous, rice, quinoa, etc. Oh, yes, or Quorn- do they make "grilled" Quorn?

I've had "stomach" problems for years, and discovered that I need to eat gluten-free (turns out it's my intestine); I use substitute ingredients (I can't use regular flour, for example)(but that Nigella cake recipe has no flour...?!), and sometimes baking things with substitutes turns them out differently. Buttermilk biscuits can come out more like pancakes, or cookies can have a different texture, but I'm used to expecting the unexpected.

I like Quorn food. Not that I'm a vegetarian. I couldn't give up bacon or KFC for that matter. I'm not that big a meat eater as it is - I don't eat anything other than Chicken, Bacon and fish.

Quorn is nice - It's a good meat substitute. As you said Atlantica, it has something to replace everything. I prefer Quorn mince to normal mince. The texture is usually pretty close too.

It's a form of fungi, so I believe. I happen to love mushrooms.

Have you given up fish Atlantica?

I will try yours Amy for sure, and they do indeed do grilled Quorn!

No, I haven't given up fish, as I just can't do it. I love any sort of fish. I guess you could say I'm a hypocrite as I don't eat meat due to the fact I hate the whole killing animals / some are killed hideously thing, yet I eat fish …. I guess honestly it's because I don't have any affinity with fish I suppose. And yes, reading that back that sounds a crazy sentence, but I hope you get what I mean.

And Amy, please do try that cake, its just delicious, and so darn easy! If you do plan on doing it, let me know !

Thanks Atlantica and MeerkatKombat (Amy too?) for the opinions about Quorn. I'm gonna have to pick some up on my next grocery trip!

Atlantica, when I first became a vegetarian, I held onto fish a little longer too, and it was all because of fish tacos. Those were the hardest food to give up. I still miss them. I've never found a fish substitute. :( But don't feel bad about it. Whatever you're comfortable with should be good enough for everyone else.

I made Panera Bread style kale and bean soup the other night, left out the sausage, and used McKay's in place of the chicken broth. Since I didn't use sausage, I added another can of beans and a little liquid smoke. It was delicious!

Thank you Linden for getting the 'can't give up fish' thing….really unsure of what I'd actually enjoy to eat every darn day without it!

Since I've swapped to full veggie and relied on fish (obviously vegetables as well!) I've noticed by skin has got like, crazy good. I was fortunate enough to have really good skin anyway which is wonderful blessing, but since eating so much fish, it's become fantastic ! Guess its down to all the nutrients etc, but I'm even shocked myself! So that is a massive positive to have :)

The soup looks divine, will give that a go for sure !

With regards to Quorn, just take a look at all this!

Oh, wait. The links to each product weren't working for me, and I realised it was a UK site, so I pulled up the US site, and they don't have fish sticks available here. :( The range of Quorn products availabe here is waaay smaller. Maybe they ship...I'm going to look into this.

Fish is the one thing I couldn't imagine Quorn making a decent replacement for. I don't know how you could get that texture and that taste without it being gross.

^Well, if I can get my hands on some Quorn fish (which will be difficult, given that it's not sold here, but if I do), you will be the first to know. :)

I'm going to try to wing a Tex-Mex casserole tonight, since I don't have enough ingredients for real Mexican food. Happy Cinco de Mayo! I know Americans don't celebrate it for the real reason, but I like to make Mexican food on Cinco de Mayo anyway.

Yes, I agree … can't really see fish working with Quorn ? But if it does, my gosh I am THERE !

That's the one thing I don't have a lot of is Mexican food …. apart from making chilli at home.

Hmm, I've never thought of chili as Mexican food. I think it's considered Tex-Mex, which isn't quite the same thing. Ooh, but speaking of chili, do you have any recipes you like? I'm so busy lately, if I could make chili in a crockpot overnight and have tons of leftovers, that would be the best!

Ahh sorry thats my bad, I didn't know it was Tex-Mex !

Well again, its a Nigella recipe, which I've adapted for Quorn. BUT the super amazing random ingredient is the vital key to making this dish darn delicious is using sweet chilli sauce as a flavouring for it! It sounds nuts, but my gosh it's good. Consequently since discovering it, I can't not have a bottle of chilli dipping sauce in the house!

150g chorizo sausage (cut into half moons)
500g minced beef
1/2 tsp ground cumin
1/2 teaspon ground coriander
1/2 teaspon ground cinamon
3 cardamom pods, bruised
390g can mixed spice beans
60ml sweet chilli sauce
Can of chopped tomatoes

I don't really have any recipes to contribute (although I am pretty good at preparing 2 of my favorite foods - reheating any cheese pizza left over from my favorite pizzarias, and making Kraft Macaroni and Cheese! ;) )

But I did want to say it's nice to see other members discussing vegetarianism and wanted to add my name to the list of forum vegetarians. I stopped eating red meat completely cold turkey in 2007 with no relapses and a few months later I had completely phased out all other types of meat, with no relapses since!

One of the best decisions I've ever made in my life! I feel healthier and have more energy (meat would often make me drowsy after a meal).

But MOST importantly for me is the peace of mind and spiritual benefits - my bond with, and sense of harmony with the animal kingdom grows stronger and stronger with each passing day...
