In the case of Monsters Inc and Finding Nemo the Taiwan version omitted the pan and scan version for a widescreen only presentation with DTS.

No. The official R3 releases have DTS, just like the PAL releases do.
Most of my Blu-ray collection some of my UK discs aren't on their database

But a DTS track is not what you msot look for comparind Disney DVDs I think since the "home theater experience" is rather limited in a Diseny movie for most films. As for the few excptions, such as The Lion King, the Disney Enhanced Home Theater Mix is enough of a great deal.
So I think the main comparing factors between the different regions should be the bonus features and/or the packaging.
