ajmrowland, are you sure on the wattage? Maybe it's supposed to be 1000 or 1100 watts? There would be a BIG difference between 100 watts and High, with today's microwaves.

Here is a quick microwave rice recipe, I posted a few other recipes that use this (some with modifications). I like rice by itself, with sugar and butter, or with a Japanese seasoning called Ebi Fumi Furikake. This has dried bits of shrimp, seaweed, sesame seeds, bonito (dried fish flakes), and some spices all mixed up. You can get it at Asian markets. They have other flavors, but I like the shrimp pretty well.

Microwave rice

2 cups rice
3 cups water
a bit of salt

Combine ingredients in a microwavable 2-quart bowl, microwave on high 10 minutes without covering, until "steam holes" appear in the rice. Cover, and microwave 5 minutes more.

Coconut Rice w/ Shrimp

01. 2 cups Rice
02. 1 can of Coconut Milk (lite is good)
03. 1 1/2 cups of Water
04. 1 can of Pineapple tidbits, drained
05. 1 can of Water Chestnuts, drained
06. 1 can of Mandarin Orange segments, drained
07. 1 can or bag of Coconut flakes
08. 1-2 pounds of shrimp, de-tailed and de-veined
09. 1 bottle of Lime Juice
10. ground ginger (the wet kind, not powder)

This is based on the above Microwave rice recipe, but replace some water with the coconut milk. Stir in some ground ginger and lime juice to taste.
I sauteed the shrimp in some olive oil and lime juice.

Add the pineapple, water chestnuts, coconut flakes, and shrimp, and stir. Fold in the mandarin oranges at the end, as they will disintegrate with too much stirring.

Serve hot. The hot rice should warm up the add-ins.

Red Beans & Rice, with smoked sausage!

I originally had a couple of cans of Creamy Red Beans (New Orleans style, I think,) but it also works with dried beans, although you will have to flavor them to taste. If you use dried beans, flavor them (and maybe add the sausage) before it is mixed into the rice.

Take the prepared rice from above (or cook 2 cups of dried rice your own way), mix in the prepared red beans, and slice a pound of smoked sausage to add to the mix. I like the red beans a bit spicy, and I just grab various spicy and hot seasonings and throw 'em in to taste, so I'm not sure exactly what I use right now. - Hot Sauce, cayenne pepper, maybe some cardamom, onion and/or garlic powder, filé, or just get some premixed Creole/Cajun spices.

Pressure cooker method:

I started with dried beans, if you soak them overnight, the cooking times may change...

Sort a package of beans, removing bad beans, rocks, dirt, etc., and rinse them in cold water. Soak them overnight if you wish.

Add 6 cups of water to the pressure cooker, along with 1-2 teaspoons of salt, and bring to a boil.

Add the beans, and close the pressure cooker. cook on high to medium/high for 10 minutes. Let the steam out slowly, and see how the beans are at that point. You may need to add more water. Add the sausage, and any seasonings you want for the beans. Remember, you are going to be flavoring the rice as well, so it's OK to get it a bit strong.

Close the pressure cooker again, and cook for another 10-15 minutes, and try the beans again. If they are the consistency you want, then ENJOY! Otherwise, just keep cooking them for 5-10 minutes at a time.

Beefy Rice
1 1/2 cups rice
2 1/2 cups beef broth (low sodium?) from a 32oz. box
a pinch of sea salt
2 cans of mushrooms, drained
8oz. bag of cooked seasoned Steak Fajita Strips (cut into smaller pieces)
6 slices of American cheese (broken up into small pieces), or 4-8oz. of another cheese, diced or shredded

For the rice, replace the water with the beef broth, cook in the microwave 10 minutes uncovered, then 5 minutes covered. I had a 32oz. box of beef broth, and just added the rest of the broth to the casserole.

Add the mushrooms, fajita strips, and cheese, stir, and microwave until hot. Stir again (to blend the melted cheese,) and serve! I got 3 meals out of it, that may vary depending on your serving size. I don't think it needs any other flavors, the beef broth, cheese, and seasonings from the fajitas blend very well.

Use Chicken Broth instead of Beef, and use Chicken Fajita Strips instead of the beef strips.

Image at those rice recipes!!! YUM-O!!! I'm going to be making Jamaican Red Beans & Rice coming up (it has coconut milk in it), so it's almost like a combo of two of your recipes!

As for the cake, I'd say just keep a watch on it while it's cooking.

I tried making the mexican pasta tonight! I used wheat spiral pasta and layered in a can of pinto beans (I still haven't had a chance to buy the dried kind, lol).

Anyway, it turned out really good! :D I'll be trying out more soon . . .

I made Pizza Pasta last night. I needed to make a lot, since I was feeding 5; I'd say there are at least 9 servings in this, if you don't halve the recipe or anything:

Amy's Pizza Pasta
1 box pasta (I used spaghetti, but any will do)
3 jars pizza sauce (I used Ragu, but any will do)
1/2 a package or so of pepperoni (I used Hormel Turkey pepperoni, but any will do)
1 pkg. shredded mozzarella cheese

(Preheat oven to 350 degrees F.)
Cook the pasta according to package directions. Spray cooking spray in a baking dish. Layer 1 jar of pizza sauce on the bottom of the dish. Layer some pasta on top. Arrange pepperoni slices on top of pasta. Layer some cheese. Repeat once or twice until you've run out of pasta. Bake for 12-15 minutes (I set the timer for 15, but pulled it out at around 12, and it was great).

Ground sausage would also be yummy in this- just make sure to cook the meat before layering! You cook ground sausage just like you would ground beef.

It was really yummy. I didn't eat much since I wasn't hungry, but I did have a few forkfuls. As one person commented, It's like pizza, only with no bread.

I meant to write this earlier but I forgot:

The way I make spinach is the way, more or less, that my Daddy makes spinach. Pour a can of spinach in a small saucepan, liquid and all. Add brown sugar and apple cider vinegar (I guess you could use other vinegars, but I've at least always made it with apple cider vinegar), and heat. So, so yummy!

I'm going to let you guys try a recipe for eating only... NO using in restaurants, published cookbooks, etc., or any way you make money on it. Don't post it on any other website, claim it as your own, and so on. © Andy H. (littlefuzzy)

7 layer breakfast crepe.
1. 1 Crepe
2. 1-Egg omelet with mild seasonings to taste - maybe coriander, cardamom, thyme, rosemary, or whatever your favorites are.
3. 1 Kale leaf - remove the hard rib, and you may want to roll it a bit with a rolling pin so it doesn't hurt the crepe.
4. Thin-sliced Black Forest Ham
5. Thin-sliced Provolone Cheese
6. Sauteed Shiitake Mushrooms
7. Hollandaise Sauce

Gently roll crepe, omelet, kale, ham, and cheese together. Lay shiitake mushrooms on top, then ladle hollandaise sauce on the whole thing. Garnish with some ground herbs, maybe a bit of loose kale. Maybe use a contrasting colored second sauce as well (orange colored?).

Not a recipe, but a thought. A while ago I said that you should use cooked rice or pasta when making soup, but maybe using partially-cooked rice would be good (so it's not as mushy), or, if you have a LOT of broth, at least for the rice, meaning you have like 2 extra cups of broth in there, then I guess it's fine to put in the raw rice...and for the pasta, thinking about it, I've just cooked the pasta in the broth. I don't know why I said what I said earlier, at least in regards to the pasta. I get confused sometimes. :P

Yeah, that's it! It's 1000. Sorry, I just didn't have the sheet on me at the time.
