Other than the Ray Conniff Singers' Christmas albums (which I recommend for anyone who loves classic Christmas songs performed with a choir sound to pick up), and the Ultra Lounge Christmas Cocktails CDs, I forget which Christmas CDs I have at the moment.

Christmas With The Chipmunks Vol 1 - original 12 track LP reissued as a CD with original track order from 60's LP. "The Chipmunk Song" is an all-time favorite.
Christmas With The Chipmunks Vol 2 - same as above - Preserves the original running order and artwork from the 60's LP
Jingle Cats - Meowy Christmas (actual cats sing (meow) Christmas songs!)
Jingle Cats - Here Comes Santa Claws (the follow-up!)
Jingle Dogs - Christmas Unleashed (real barking dogs get in on the act!)
Rudolph, Frosty, and Friends - Compilation featuring many (but not all) of the songs from the earliest Rankin/Bass Christmas specials (Rudolph, Frosty, Santa Claus Is Coming To Town, and Little Drummer Boy). Great catchy songs, with arrangements courtesy of Maury Laws.
Rudolph the Red Nosed Raindeer - soundtrack from the Rankin/Bass TV special. Johnny Marks wrote some killer catchy songs to compliment the title track!
Frosty the Snowman/Santa Claus Is Comin' To Town - complete song soundtrack to these early Rankin/Bass classics, even includes the dialogue between the songs.
A Charlie Brown Christmas - original soundtrack
John Denver and the Muppets - A Christmas Together - a great, heartfelt album blending the talents of Denver and Jim Henson and his team. It makes me sad now to think that both Denver and Henson left this world way too soon.
Muppet Christmas Carol - original soundtrack
A Christmas Carol - soundtrack from the TV movie based on the Alan Menken musical. I LOVE the song "God Bless Us, Everyone"!
Country Bear Christmas Show - soundtrack found on the "Musical History Of Disneyland" boxed set. Great, charming, fun! Love those bears! I wish WDW would still present the holiday show.
It's A Small World Holiday - soundtrack found on the "Musical History of Disneyland" boxed set - IASW is another fave attraction. I wish WDW would do this holiday overlay.
Various Disney compilations (A Family Christmas, etc) - featuring Mickey and the gang singing Christmas songs
Holiday Wishes/Jingle Jungle Parade - soundtrack including both is available at WDW
Polar Express - original soundtrack - nice blend of classic recordings with the new songs written for the film like "Spirit of the Season" and "Believe"
The Nutcracker Suite - I have a few classical CDs of this
Charlotte Church - Dream a Dream - beautiful classical/operatic versions of Christmas songs with emphasis on the more spiritual side of Christmas music (Ave Maria, Silent Night, etc)
Cocteau Twins - Snow EP (featuring "Frosty the Snowman" and "Winter Wonderland" sung beautifully by the incomparable Liz Fraser)
Enya - Silent Night EP
Also, although a song and not an album per se, I absolutely love the original version of "I Want A Hippopotamus For Christmas"!

Scrooge - original soundtrack to the 1970 film with tuneful tunes written by Leslie Briccuse
Rankin/Bass - more of the individual specials getting their own soundtracks or at least more compilations, as the songs from the latter Warner specials are extremely under-represented on CD
