On PS3, I can't get Little Big Planet out of it. This game is truly addictive after the first 10 minutes. I really love the graphics and all the things you can do with the characters.
On the Wii, it definitely has to be the "Resort" game. I, too, really like the Water ski part of the game. It is really a lot of fun.

Little Big Planet is awesome! It's one game that I go back to time and time, again. The re-playability is endless, because you can play online levels that people create. On the Wii, I've been addicted to New Super Mario Bros. Wii! Awesome game! So darn good!
On the PC, Bejeweled Twist is one I can't put down. I've also got Peggle Nights, but, haven't played it, yet.
I've also got Bejeweled 2 for the iPhone 3G. I play that, daily, because they've also incorporated Bejeweled Blitz from Facebook into it! So addicting!

Super Mario World 2: Yoshi's Island (1995) on my Super Nintendo! Got 100 points in all levels for the first time since I've bought the damn game! Still one of the best ever!

Got Mario & Luigi: Bowser's Inside Story, Zelda: Spirit Tracks, and Uncharted 2: Among Thieves for Christmas.
So far I've only started Mario & Luigi, and its a lot of fun. Hope to get into some Uncharted 2 multiplayer tomorrow. I remember the beta was great, and from what I've heard the full game is amazing.
