Cinderella's theme song (A Dream is a Wish Your Heart Makes), is played throughout the score and reprised as a finale, but it's not played during the credits. Likewise, Lady and the Tramp begins and ends with a song that I can't even think of, but Bella Notte better exemplifies the story theme and is played in other scenes instrumentally, I believe. For films that aren't musicals, such as The Emperor's New Groove, then the credits song automatically becomes the theme.

a. You Can Fly! You Can Fly! You Can Fly! is debatable since it does end the film as a reprise and is featured in the score. I chose Second Star, though, because the story is really about Never Land, not flight.
b. I think the film ends with a reprise of this, but I don't remember
c. Colors of the Wind is debatable since it's echoed throughout the score and is featured in the credits. I chose If I Never Knew You, though, because Pocahontas is first and foremost a romance, and while there's a vocal reprise of IINKY in the 10th Anniversary cut, there's none for Colors.
d. You'll Be in My Heart could also work, though Two Worlds begins and ends the film, and I think the story more bridging a gap between species than it is about love.
e. No songs are reprised, not even instrumentally, and several songs are played over the credits. This is anyone's guess, and I just chose this Disney did as their single.
I'd go with that, plus the fact that its the most famous of the songs featured. The only movie I disagree with in your list is Tarzan's "You'll Be In My Heart." Tarzan has many storylines, but I don't think his and Kala's relationship takes centerstage. It, like TLM and Pocahontas (more the former than latter), centers more on the bridge between "Two Worlds." However, it's more understandable to see "Baby Mine" as the theme-song for Dumbo.
I agree and disagree, Disney use's that song basically as saying Lilo can't help but failing in love with stitch. Like she didn't care he was an alien and stuff like that. you get me? EDIT: I can't believe I forgot this. Disney put a music video called "Your 'Ohana'" sung by the Kamehameha Schools Children's Choir on the Region 2 Lilo & Stitch Special Edition DVD. I have the video uploaded on my account.
