I see almost every movie opening day, sometimes even before they come out at special previews. I'll try to recount most from the past year...

Chronices of Narnia: The Lion, the Witch and the Wardrobe(Preview screening Monday November 21)
King Kong(Preview Monday November 28
Rent(Preview this Thurday)
Harry Potter and the Goblet of Fire(Preview TOMRROW!!!!)
Zathura(Seen it twice now, free preview a few weeks ago and another free preview with friends Friday)
Jarhead(saw twice, once at preview, another opening day) WAY
Legend of Zorro mild
Elizabethtown
Wallace and Gromit
Serenity
Corpse Bride
Just Like Heaven
Transporter 2
Brother's Grimm very mild
Red Eye
Skeleton Key way
Stealth
Bewitched Moderate
Mr. and Mrs. Smith
Cinderella Man as far  as possible
Madagascar
Star Wars Ep. III: ROTS somewhere in the middle. The acting and dialogue were horrible, but I can't hate it altogether because, well, it's Star Wars.
Sahara
Fever Pitch(Sneak Preview)
The Pacifier mild
Hitch
Phantom of the Opera
Lemony Snicket's A Series of Unfortunate Events
Ocean's Twelve
National Treasure and The SpongeBob SquarePants Movie (2 in 1 day) for both
After The Sunset
The Incredibles

And that ends all the films I've seen opening day or before all the way back to November 5, 2004. Ya, I see way too many movies opening (or at all for that matter :P )

I always avoid going to movies on opening days - I usually end up going during the opening weekend or a week after the movie's release (and I usually buy tickets in advance in case the movie's real popular). The only movies I remember going to during their opening weekend was Fantastic Four (Saturday) and Serenity (Sunday).

Off the top of my head, the only ones I can remember seeing on opening day are:

Harry Potter and the Chamber of Secrets
The Lord of the Rings: The Two Towers
Harry Potter and the Prisoner of Azkaban

Harry Potter and the Goblet of Fire and The Chronicles of Narnia: The Lion, the Witch, and the Wardrobe will both soon be added to that tiny list. Opening weekend's a different story, though. I've seen many films on opening weekend since I almost always go to the movies on Saturdays, hence making Friday trips rather rare.

Opening day is the best time to go. I can't remember when I didn't see one opening day. Most recently, I saw Jarhead. It was very good, though quite uneventful-- not to say it wasn't engaging or interesting.

I can add the following movies to my list of opening day first timers:

Jarhead

Zathura

Harry Potter & Goblet of Fire

Walk the Line

Just about every Friday I am at the theater for opening day of most of the good movies. One's I wished I missed include "Flightplan" and "Red Eye".
