Obviously, Disney movies have now been issued many times on a disc format, from Laserdisc to DVD to Blu Ray to 4K, many multiple times on one or more of the formats. But does anyone know if there's any type of database that compares the various releases and has a comparison list of bonus features that were on each release and either ported from a previous release or dropped?

There's the Disney wiki where each movie has its home releases listed there.
