Would Walt Disney World in Orlando have been possible today?

To build it, the Disney company had to buy 27,000 acres of wetland. Back then swamps and bogs were considered practically worthless by most people.

During the last year of his life, Walt was working on another project; Disney's Mineral King Ski Resort. It was stopped partly because of conservationists.

Since then, environmentalism has come a long way. If it had been possible to build the Walt Disney World today or not is hard to say, but at least if would most likely have led to massive protests, headlines and social media campaigns.
For good and worse, it was built, and all Disney can do is making it as green as they can.

I don't know if Disney would have been allowed to snatch up as much land today. I do believe they have set aside portions of the WDW land for conservation, so that's one way they're making it green, as you said. Using paper straws at Animal Kingdom is another way...and they donate $ with the DisneyNature films, they educate about conservation, they help animals...they do a lot...
