I've been thinking of Disney's Hollywood Studios' moniker of "The Hollywood That Never Was... and Always Will Be". But what is that moniker supposed to mean?

Simple, it's Hollywood as portrayed in movies and in the public's minds. When you think of classic Hollywood, this is what you think of, not what was/is actually there. Disney recreated Hollywood as the magical place we all imagine it was.

Yep. Ironically enough, the closest we got to the Classic Hollywood portrayed in movies and in the public minds was at MGM Studios itself back in the 20s and 30s.
