As I understand it, you go from section to section to watch featurettes, but I don't know if there's a "play all" option that just lets you watch it as a straightforward documentary.
From the DVDmg review, I figured this must be the order for a "play-all' documentary. I removed the three "In Walt's Words" featurettes and the three "Host" segments as those seem more to be standalone material than a chapter of a documentary. Altogether, this version of a documentary is about an hour and 37 minutes, give or take...
