Couldn't have said it better myself!

Queen Latifah, Mo'nique, and Fran Drescher could all be good options as well.

Sorry to be the one to break this to you, but it was announced last year that Jim Carrey was replaced with Bruce Willis for the voice of RJ in "Over The Hedge."
And Jim has done some previous voice acting, BTW. He had a bit part in "The Itsy Bitsy Spider" (1992) an animated short that preceeded the theatrical release of "Bebe's Kids." And he also did the voice of Count Olaf for the "Lemony Snicket" videogame. I would very much like to hear him do more voice acting as he's one of my all-time favorite comedic actors. And he's one of the best impressionists in the history of entertainment.
I'd also like to hear Bill Murray do a voice
He did do the voice of Garfield for the live-action/CG movie, although he certainly was no Lorenzo Music (who will forever and always be the definitive voice for Garfield).
Oh, and thank you for saying "hear" rather than "see" regarding Murray's voice. It's a nitpicky habit of mine, but I find it slightly annoying when someone says they'd like to "see" a voice.
As for Adam Sandler

You took the words right out of my mouth.

Not if Disney would actually want people to go see the movie. I wouldn't pay $8 to hear Fran's annoying voice/laugh in an animated feature film.
Heck, I wouldn't go if someone paid me to go.

My sentiments exactly. It's a proven fact that people by en large don't go to animated movies just to hear celebrity voices. People go to be entertained, or take their kids so that they can be entertained. Pixar movies have been the exception IMO because they make excellent casting choices and are able to get such great performances from the actors -- 10 minutes into the film and the characters are so well-developed and performed that you forget that it's Tom Hanks, or Tim Allen, or Julia Louis-Dreyfus, or Kevin Spacey, or Billy Crystal... and I could go on and on.
Here's just a few box office flops, because the studios were banking more on celebrity status rather than making a solid, entertaining animated movie:
Quest for Camelot (1998)
The Road To El Dorado (2000)
Titan A.E. (2000)
Other than Jim Carrey and a handful of favorite actors/actresses whom I really enjoy, there really aren't any "celebrities" that I'd like to hear do more voice acting. Most celebrities aren't voice actors. I'd rather hear actual voice actors -- people who do character voices for a living.

I hafta disagree. Gilbert Gottfried's voice is annoying, yes. But he's funny -- anytime he ever does a guest bit on Leno, he cracks me up. His stand up routines are very funny too.
Comedically, Fran Drescher isn't even close to the same level as Gilbert Gottfried. I saw her on The Late Late Show last night and changed the channel barely 2 minutes into her interview. Her voice is grating. I'd rather listen to fingernails on a chalkboard.

Tastes differ I guess, because I laugh every time I hear her. While I like Iago's character, he actually sometimes gets on my nerves...

And I would actually agree with that too. I've tried watching that Cyberchase show on PBS, with Gottfried as yet another voice of a talking bird. But whoever the voice director is on that show just isn't able to get a good performance from him. He comes across more as annoying than amusing. I really enjoyed his performance in "Aladdin", and my personal favorite voice role he's done was the voice of Mr. Mxyzptlk on "Superman: The Animated Series." But I'm actually more of a fan of his live-action stuff.
And from some of the conversations I've had with a few cartoon voice actors I've met, they say Gottfried is NOT a good voice-only actor. They tell me that in recording sessions Gottfried requires constant coaching and direction and many multiple takes in order to get the right performance, sometimes, of even a single line.

Tell that to the people that made The Nanny such a success in its initial run and now in reruns- or to the people that make her new TV show apparently successful. She's had a few good feature films too. I think she's really funny.
No, celebs don't make an animated feature and shouldn't be used just b/c they are celebs. However, they also shouldn't be discouraged or viewed negatively just b/c they are celebs. Many celebrities are such because they have unique voices, which fit very well with a lot of animated roles. They are also famous because they are accomplished actors- some of the best in the world. As such, they can often master a variety of different voices, and convey a lot through the use of their voice. Many of them also sing quite well, which helps with musicals. Don't forget that voice-acting is acting too.

I'm completly aware of that but I want him to voice a chacter in all animation next time because, unless you couldn't tell, Garfield was a disappointment, so maybe he'll have better luck next time!

Well, Clay Aitken will apparently be playing the singing and possibly speaking voice for the male lead in Rapunzel, which is also starring Kristin Chenoweth and Reese Witherspoon.

I recently read that Cher is interested in doing the voice for an animated film, and, at first, I couldn't understand where she would fit... but now I can see plenty of possiblities for her voice. And let's face it, like Cher or hate Cher, she knows how to pull off a comeback, and Disney needs a comeback.
