Aren't you people forgeting about "Saludos Amigos" and "The Three Caballeros"? No, it's not because I love the movies (which I do), but it is because there was an Archive Edition laserdisc released sometime ago which had TONS of extras. So it would be easy for Disney to just port over that edition's bonus features to DVD. Both movies could easily fit on the first disc while all the bonus features reside on the second. The demand of an uncensored version of "Saludos Amigos" is also a good reason for re-releasing them, but this time with a full-blown restoration ("The Three Caballeros" really needs it!).
Jim Hill once stated that there were some rumors that Disney might ressurect the Archive Editions on DVD, and considering that "The Three Caballeros" (and "Saludos Amigos" to a certain degree) is popular among animation enthusiasts, this SA/3Caballeros combo might be a nice start.

Now, that would make a heck of a DVD, wouldn't it?
I think all Disney classics are going to get re-released as special editions eventually, but that doesn't mean all of them are going to be 2-disc sets. The ones I believe have the most chances of getting the 2-disc treatment are: "Dumbo" (this one is almost confirmed), "Saludos Amigos" and "The Three Caballeros", "The Sword In The Stone", "The Fox and The Hound" (being the first film of the new Disney generation of artists), "The Hunchback of Notre Dame" (another LD port), "Hercules" and maybe "Treasure Planet" and "Home on the Range" (both had material produced to fill in 2 discs, but were paired down to 1 disc).
