Well, I've always liked the design for Princess Aurora's hair and it's animated well but as someone said earlier, Ariel's hair had to be animated very meticulously since she was underwater most of the time. It also looked great in the reprise of Part of Your World and when Prince Eric first saw her. But Pocahontas's is amazingly animated when it's flowing in the wind and Jasmine's hair is really unique.
I think it's a tie between Aurora and Ariel, but I'm going to vote for Aurora because I watched SB more recently than TLM.

Ariel...Since her hair was in water, they had to pay more attention to detail and I think it looks stunning...
