Following Monsters University, there are three original features in the works being directed by Pete Docter, Bob Peterson and Lee Unkrich. After the Unkrich project, we don't know what's next. But, no, Pixar does not just have sequels in the works. Outside of Monsters University, we don't know of any sequels being planned.

There has been absolutely no suggestion that "all their future movies are planned to be sequels" so there's no need to worry about that. At the moment there are no sequels in the pipeline at Pixar, after the upcoming Monsters, Inc. prequel there are three original films on the slate so I wouldn't worry too much about sequels right now.

Brave is Pixar's thirteenth film and, with the release of Monsters University, there will be a sequel or prequel produced for three of them. After Monsters University, if the slate remains as it is then Pixar will reach seventeen films before we might see another sequel. It's not like Pixar are churning out sequel after sequel. In one of the interviews posted on here with Andrew Stanton he says that the regular development time of one Pixar film is longer than the shelf life of a studio head and that, while he admits he is always thinking of an idea for a Finding Nemo sequel, he doesn't make any suggestion that he's come up with one as of yet so a sequel to that film might be years away. Pete Docter is working on an original film right now so I wouldn't think he's planning an Up sequel. Brad Bird has said if he comes up with an idea for a sequel to The Incredibles then he would be happy to make one but, so far, he hasn't come up with an idea that he's happy with.

They weren't "picked up" by Pixar, those versions of the film were being worked on by Circle 7 which was dismantled and those films scrapped. The Monsters, Inc. sequel that Circle 7 was working on was completely different from Monsters University, though some in the know apparently thought that the premise was better than Pixar's original film:

And, as of now, there is no Finding Nemo sequel. If Andrew Stanton comes up with an idea for one in the near future then maybe we'll see it in a few years but, as far as we know right now, it isn't happening and we have three original films on the way from Pixar to look forward to.
I just want to say that while it might seem that I'm blindly defending Pixar here, I'm not and I understand why some are concerned about the prospect of sequels. I do think Pixar have some faults (though they are relatively minor) and agree with the view that Cars 2 fell far below the standard of quality we have come to expect from the studio (though I did enjoy it more than a lot of people seemed to). But while I don't doubt that there might be more sequels on the way, they aren't imminent. One thing I like about Pixar is that there is no pressure on directors to immediately produce sequels to their films and that people like Andrew Stanton, Pete Docter and Brad Bird take time to come up with ideas that they are happy with and don't compromise on that; if they did, we probably would have seen Finding Nemo 2 and The Incredibles 2 by now. I can only speak for myself but I would have no problem with sequels in the hands of the creators of the original films, knowing that they would not be happy to commence with a sequel unless they had faith in the ideas they had come up with. But I'm not worrying about sequels right now when we have three films on the way that are original and whose concepts sound very interesting.

Honestly, I really like Circle 7's version of Monster Inc 2. way better than MU. But, it's because Boo is in it, as I imagined. I just really hope Boo gets a cameo in MU or something.

AV: In January 2010, an infamous review of Laurie Craig’s Finding Nemo 2 screenplay went online. Was that review of a draft unfinished, or was the critic dishonest about having read it? I guess there is also the possibility that the critic read a fake screenplay, thinking it was the real deal.
BH & RM: Not sure what draft was leaked, but she was most definitely working on the draft. She, as we recall, did finish the Nemo script. It just was at the tail-end of the studio’s existence. We had our hands full with our projects, so we never had a chance to read it. We’re not sure they would have even let us read it. But we knew it excited [studio execs], and we met with Laurie around the studio and at events a couple of times, as we recall.
It was planned and scrapped with the rest of the planned sequels to Pixar films that Circle 7 were working on before the studio was dismantled when Catmull and Lasseter joined WDAS. If there ever is a Finding Nemo 2, I would wager it will be written and devised by Andrew Stanton and would, like Toy Story 3 and Monsters University, bear no resemblance to the concept that Circle 7 might have been working on.

It even gets worse. Dory, the amusing forgetful fish voiced by Ellen Degeneres in the first film, gets her memory back near the end of 2 (by hitting her head, natch)! Bad choice. Nemo is given a long-lost brother, all the better to spell out issues such as jealousy and inner growth, I guess, but fabricated as all get-out. Another bad choice. Of course, let’s not forget the merchandising, so write in some cutesy animals like polar bears and dolphins, man, gotta get them tie-in stuffed animals stuffed and sold!
I actually like those ideas. It would be cute by having Dory get her memory back and I love how one of Nemo's brothers actually survived the attack. That could be a three-quel as Nemo looks for his other siblings and mom.

I always felt that many of Pixar's films have perfected endings that make sequels unnecessary. The Toy Story sequels didn't bother me. In fact I thought that TS3 was necessary in order to address the unresolved issues as to what would happen to the toys in the future. Now that TS3 has been made and capped the story off perfectly, I felt uncomfortable with even the TS shorts being made since they take place after TS3. If Pixar is already a brilliant money-making powerhouse at making original movies, they why doesn't anyone at Pixar or Disney feel more confident about their ability to make more original films? Brave is not going to be that bad is it? I guess I'll have to see come Friday. And consider that the critically panned film in their lineup is a sequel...

Is there anything else that backs up the rumour that Toy Story 4 is in development besides the comment Tom Hanks made in an interview that took place over a year but every article seems to quote as proof that the film is happening? I know Tim Allen said not along ago that Disney and Pixar don't like the actors publicly talking about Toy Story 4 but we know that they were signed up a while ago for any eventual sequels or spin-offs that might come about so backing up the rumour by saying the actors are returning doesn't really mean much either. Have people heard the rumour that Finding Nemo 2 is in development and then jumped to some kind of conclusion that Toy Story 4 must also be happening? I just find it strange that all this speculation has sprung up but there seems to be very little to substantiate it besides what Tom Hanks said last year.

I DO hope this isn't happening.
The story had a perfect ending with 3.
Besides, even if they end up making it and it is amazing to the whole world Pixar would have lost people's trust and would never be able to recover it.

Well, yes. If you browse this thread you're gonna find more information. Tom Hanks said it 3 times, Tim Allen said it once, John Lasseter's response was suspicious, and two different industry insiders said that it's happening. Also, Andrew Stanton and Mark Andrews said that Pixar will continue making more sequels.
There are two possible explanations: These people mistook the upcoming TV specials for a feature-length sequel or a sequel is indeed coming in addition to the specials. Either way, I don't think it's such a big deal.

I know and I've seen all of it, I was just wondering if there was anything new besides that particular comment that Tom Hanks made in a BBC interview that every article seems to quote. I agree that it's not a big deal, I was just curious if I missed something new.

Why would they remove it I wonder? Does this mean its been quietly canceled or did they just want to put the cat back in the bag a bit longer?

I cant help but draw a parallel to when Toy story 2 started off as a direct to video sequel and ended up as a real movie. What if something similar is happening here?
